But the real job isn't cooking. Your regulars are creatures of habit. Learn their faces, their quirks, their tells. Because tonight, something walked in wearing a familiar face, and it's sitting at table four asking for the usual. Spot the difference. Make the call. Use inspection tools (scales, thermometers, dermal scanners, UV lamps) to investigate customers who don't quite add up. Cross-reference what you see against your notebook of regular profiles.
